Pear and Red Wine Granite
Ingredients:
1/2 bottle of red wine
1 bartlett pear
2 cups of sugar
Method:
Bring wine to a light boil on low heat for 2 minutes. Add sugar and stir. Place diced pears (do not stack) in a plastic rectangular covered container, cover with wine. Place in freezer for over 8 hours. Serve the granité in a chilled sherry glass. Garnish with a mint leaf.
This “Granité” will be served just before the main course as a “trout normand”.
